Moss Cake in a Glass

Ingredients

For the dough:

  • 110 g spelt wholemeal flour
  • 30 g vanilla 100% Whey Protein
  • 30 g xylitol
  • 5 g baking powder
  • 50 g coconut milk
  • 2 eggs
  • 2 tsp. lemon zest
  • juice from one lemon
  • 70 g baby spinach
  • 1 tsp. vanilla paste

For the frosting:

Method

Preheat the oven to 180 °C. Mix together spinach, coconut milk, eggs, and lemon juice. In a large bowl, mix together flour, protein, xylitol, baking powder, vanilla paste, and lemon zest. Add the mixed ingredients to the dry mixture. Transfer the dough to a small cake pan and bake for 20–25 minutes. Meanwhile, prepare the frosting – mix all ingredients for the frosting together. Let the cake chill down and crumble it into the glasses. Add a layer of cream and repeat. Decorate with a chocolate egg.

Easter Muffins

Ingredients

  • 65 g Protein Muffins
  • 60 g semi-skimmed curd
  • 50 ml whipping cream
  • 10 g chicory syrup
  • red food colouring

Method

Prepare the muffins according to the instructions. For the frosting, mix curd, cream, and a few drops of food colouring and mix well. Decorate the chilled down muffins with the frosting and serve.

Vegan Banana Bread

Ingredients

Method

Mix all ingredients together, put a banana on top and bake for 20 minutes at 180 °C.

Kidney Bean Brownies

Ingredients

  • 240 g kidney beans (drained from a can)
  • 25 g chocolate Iso Whey Prozero
  • 30 g cocoa
  • ½ sachet baking powder
  • 120 g apple purée
  • 2 eggs
  • 30 ml chicory syrup
  • 160 low-fat acidophilic milk/kefir

Method

Mix all ingredients apart from egg whites with a mixer. Mix egg whites separately in a bowl until firm. Add egg whites to the mixture. Transfer the dough to a cake pan and bake at 170 °C for 45 minutes.

Lemon Poppy Loaf

Ingredients

For the dough:

  • 200 g spelt wholemeal flour
  • 30 g coconut oil
  • 40 g poppy seeds
  • 20 g vanilla 100% Whey Protein
  • 1 egg
  • 150 g semi-skimmed curd
  • pinch of salt
  • juice from one lemon
  • 1 tsp. lemon zest
  • 30 g xylitol

For the frosting:

  • 200 g ricotta
  • 100 g semi-skimmed curd
  • juice from half a lemon
  • 20 g chicory syrup

Method

Mix all ingredients for the dough in a bowl and form a dough using hands. Transform the dough to a loaf tin covered with a baking paper and even it with your hands. Bake for 30 minutes at 180 °C. Meanwhile, prepare the frosting – mix all ingredients together. Put the frosting on top of the baked and chilled loaf and serve.

Curd Truffle Full of Protein

Ingredients (2 large portions)

Method

In a bowl, mix 40 g oats with one teaspoon of honey. Microwave for a few seconds until the honey is runny and mix together. Divide skyr between three bowls and add one ingredient into each bowl. Stevia to one, peanut butter to the second one, and protein to the last one. Mix in each bowl thoroughly. Add all layers evenly in two glasses – oats, white skyr, peanut butter skyr, and chocolate skyr. Sprinkle with protein and let rest in a fridge for a moment.
